Fiery Beef Madras – 2sp

One of my OH’s conditions for me getting my beautiful puppy was that we would have ‘curry Sundays’ which to be fair, we have mostly stuck too (with the exception of last night!). Last week, in an effort to keep things interesting, I whipped together this lovely curry and I have to say, it may be my favourite curry creation yet. I cooked this on a low simmer for an hour so the sauce was lovely and rich and the beef lovely and soft and falling apart. If you don’t have time to do this however, just pop it on a higher heat for anywhere from 15 minutes.

Beef and Blue Cheese Burgers – 3sp

Having created quite a variety of burgers over the past couple of years, I realised this week that I hadn’t written any recipes for good old beef burgers. When scratching my head over what to pair with them I though the classic combo of beef and blue cheese would work quite nicely, and I was definitely right! These burgers are packed full of flavour and have just the right amount of blue cheese tang.

Knowing how easy it is to cook up delicious and healthy meals quickly and easily has turned me into a bit of a picky eater when I’m eating out in cafes and restaurants. Indian Beef Stir Fry with Yoghurt Rice -11sp

This is a dish that I only caught the end of on an episode of Food and Drink with James Martin but it caught my eye as both the OH and I love a stir fry. Having never experimented with an Indian Stir Fry before, I thought I would give it a go. I didn’t have to make too many changes to this one as the point of the episode was healthy recipes. I did however omit much of the oil (unnecessary calories!!), regularise the portion sizes and up the spices for more flavour! You can see the original recipe here.

Sizzling Beef with Spring Onions & Black Bean Sauce – Only 12sp!

This was a recipe made for me by my lovely best mate’s OH and it was so nice I bought the recipe book to make myself a smart point friendly version. It’s from Jaime’s Ministry of Food (original recipe here) and comes in at a very reasonable 12sp each. It’s a nice change to have a different stir fry sauce like black bean and the addition of rice instead of noodles makes another welcome change!

Chilli Con Carne – 4sp

Chilli is one of my all-time favourite meals. It is so quick and easy but so incredibly tasty and I look forward to it every time we have it! I often assumed chilli would be quite pointy but I think 6sp is more reasonable considering the giant portion you get. Because it is so low in points this also means that you have more points left over for rice, and cheese or even sour cream on top if you fancy!
