Chicken and Chorizo Jambalaya – 8sp

We often take some meat out of the freezer in the morning and then I come home and see what I can create with it. One evening a few months back, having taken two chicken breasts out the freezer, I arrived home from work and thought ‘I really can’t be bothered to faff around’ so I looked into my fridge to see what else I could throw in with the chicken to make something quick, easy and tasty.  This was result and I have to say it’s one of mine (and a lot of my friends) favourites. It’s all cooked within one pan so limited washing up is required. The pan needs to be covered while simmering however if you don’t have a lid, just use a bit of tin foil, that’s what I do!

Smoky Sausage Pasta by Skinny Kitchen Secrets

I always head down the ‘world foods’ aisle in my local supermarket whenever I’m in need of a spice refill (you get twice as much for half the price just one aisle away from all the regular supermarket range!) Many a time I’ve walked down there and looked at the polish food range and all the lovely meaty goodness they have on offer but I’ve never know what to try. Then I came across a recipe that used these lovely smoked sausages and so I used it for a bit of inspirations to make this quick and easy dish. The sausage I used in this recipe was from Aldi and is a lovely smokey delight. I always thought smoked sausages would be a bit pointy but when I worked it out it was actually way less than I anticipated meaning a very filling, low sp dish!

Chicken, Butternut Squash and Pesto Lasagne – just 14sp

This little number (an adaptation of a recipe I came across on the Good Food website here) was cooked up at the special request of my lovely little sister who fancied a new chicken pasta dish. I really fancied trying something new and after a bit a research came across this little treat. I cooked it up last night and it was absolutely delicious and so different from anything else I’ve tasted so, Michelle, enjoy!

Asian Pork Hotpot – 7sp

I cook with lean pork steak quite often as it’s often a nice change from chicken. I’m always on the lookout for new ways to use it and so when I came across this recipe on the Good Food website I knew I had to give it a go. I adapted the recipe to make it both Weight Watchers friendly and added a few bits that I thought would improve the dish too. The result was gorgeous. It had a really different flavour to anything I’ve made before and even though its technically a hot pot, it feels lovely and light and summery.

Indian Chicken Korai – only 2sp

I love a nice spicy curry and it’s something I love to go out and have in an Indian Restaurant. In the past whenever I’ve tried to make an Indian style curry it has never tasted as good as a take away (I think a lot of other takeaway meals can be home made much nicer!!) and so I have been attempting to create a good one for a while now. This little gem was exactly what I wanted, so quick and easy but so fresh tasting. The ‘final ingredients’ added at the end add a real fresh, spicy kick and the sauce is full of flavour.

Thai Chicken Salad – 2sp

I went out for lunch with friends on Saturday and had the most amazing Thai Chicken Salad which not only had no nasty carbs in it, but was very filling indeed. As we had a spare chicken breast knocking around the fridge on Monday night I really wanted to try and find a similar recipe which I could make for mine and the OH lunch that was both quick and easy, low in points but really tasty! I found this on the good food website here, adapted it slightly for us Weight Watchers and it was a revelation, absolutely delicious and really low in points!!

Chipotle Chicken and Serrano Ham Salad – 4sp

We’ve just moved offices at work so, where as I used to head to Eat for lunch on the go, the closet place to my desk these days is the lovely Pret-a-Manger. Now don’t get me wrong, I love the salads and soups in Pret. Even better, they pop all of the nutritional information on their website so you can work out the points too.

One of my favourite salads to pick up is the Chefs Chipotle Chicken Salad. At just 8sp it’s a real bargain points wise however not such a bargain on the old purse strings. Not only that, whilst tasty, its lacking all of the zero heroes which on Weight Watchers keep you full for the rest of the day and stop you snacking.

As a result, after analysing the contents of my salad, I decided to give it a go. The results were a real treat. I essentially had a salad for less points which was twice the size. Because I had made it myself, I even managed to sneak a few extras in too!

The best part of this salad for me is the salsa. After tasting Pret’s version I thought it wouldn’t harm to try and replicate it so I literally took a cheap pot of salad (hot salsa from Aldi) and added half a tsp of chipotle paste and voila! It was amazing, a total revelation and a lovely dressing which can be added to all kind of salads and dishes for 0sp!

Creamy Cider Mustard Pork with New Potatoes and Green Beans – 9sp

Me and the OH love our pork at the moment so tonight, with the pork out the freezers and all defrosted, I fancied trying something new and easy. I opened my fridge to see what we had that I could use up and popped the following together and it was delicious! The OH couldn’t believe it was so low in point and it was so filling and tasty. If you don’t have any cider to hand I think it would be just as nice without it but it does just add something a little bit different!
