Venison Meatballs in a Red Wine Ragu Sauce – 6sp

I noticed that Aldi had started selling some lovely venison meatballs a while ago and for only 40kal a meatball, I knew I had to give them a go! The venison is a lovely different flavour, and the ragu sauce, which usually would take hours to simmer and reduce, is both quick, easy and packed with veg! I added a little cream (1 tbsp) but this is optional, I find it takes a little of the tang of the tomatoes away, but it’s lovely without it too. It’s a great way to use up lots of veg and get a nice portion of sauce for not many points at all!

Mince Beef Taco’s – 6sp

Mexican food is one of my favourite cuisines. There are so many different textures and flavours and more often than not, the ingredients are uber healthy too. I often cook with mince, usually closer to payday when it’s all I have left in the freezer, and this week I fancied a brand new new use for it (over and above chilli, bolognaise and lasagne) and so I decided to combine Mexican and mince and voila, it gave me tacos. These really were delicious and a real ‘sharing’ meal. I just whacked everything including the pan of mince in the middle of the table and let everyone dig in. The OH had his with Uncle Ben’s Spicy Mexican Rice (5sp for half a packet) but I just had mine with the taco shells and lots of salad and it was nice and filling enough without.

Harissa Roasted Vegetable Salad – Only 1sp

Apologies for the awful pictures but I realised half way through munching this that I had forgotten to take one! This was (half) of the lovely lunch I had today which was literally thrown together from the leftovers of last night’s dinner (Minted lamb chops with harissa roasted veg!) I always make extra roasted veg when I make this dinner (it would be rude not to as it’s virtually free of sp!!) just so that I can have this lovely salad the next day but if you are making if just for lunches then following the recipe below will make you a generous four portions! It’s so filling and satisfying and such a bargain at only 1sp, yes 1sp for the whole thing!

Apple and Cinnamon Strudel – 3sp

Apple strudel is one of my guilty pleasures and I always walk past it as fast as possible in the supermarket to avoid temptation. I didn’t have anything remotely sweet and appley the whole time I was losing weight and haven’t since I started maintaining so tonight when I saw the bramley apples in the supermarket on offer I thought, right let’s make this WW friendly so I can finally satisfy my craving.

Fragrant Moroccan Wrap with Chicken and Falafel! – just 14sp for 2 wraps!

Having made my amazing Falfel’s originally to go in my salads through the week, once I tasted them and realised how amazing they were, I decided to knock up an evening meal to get the best possible use out of them! Having already roasted a chicken for the week ahead I decided to go with the Moroccan theme and make myself a chicken falafel wrap. After a bit of experimentation it resulted in the below which I have to say tasted absolutely incredible.

For 14sp you get two lovely wraps which feel really substantial on your plate. Even my OH, who usually likes extra carbs with his meal, was raving about this recipe. There are so many delicious flavours bursting onto your taste buds so it’s thoroughly satisfying!

Butternut Squash Falafel

Falafel is something that me and a few of my friends at work absolutely love but usually they are rather high in points so you end up with a measly lonely falafel and absolutely no satisfaction. Because of this I decided today to try adapt a recipe (original here) into a low point falafel recipe that would taste just as good and the result was amazing! This falafel can be served in a wrap with salad and extras (serving suggestions below and recipe here) or as part of a normal salad with lots of vegetables and leaves. It would also be great with my harissa roasted vegetable salad!

Spaghetti Bolognese – 5sp

I love a nice, quick and easy spaghetti bolognese and I’ve been making this one for a good while now. It’s a recipe which, I think, is unaffected by the fact I am on a diet as I’ve never used anything too bad in there. I think it’s worth making sure you are using extra lean mince as that is such an easy way to grab a few sp back and put them towards some extra pasta or a little cheese. I use this exact recipe when I’m making lasagne too but I usually add around half a box of tomato passata (at the same time as the tomatoes) to make it slightly more saucy and rich, perfect for baking in the oven!

Gorgeous Chinese Chicken Curry – Only 3sp

My friend made a gorgeous curry for me one night while I was at uni (feels like a lifetime ago now!!) and when I later asked for the recipe,she couldn’t find it! The only thing she could remember were the spices that were in it. It was so nice that I fiddled about for a while and came up with my own version of the recipe and it was even better!!

Mini Spinach, Feta and Mushroom Muffins – 2sp

These little muffins are so quick and easy to make and are an ideal way to make lunchtime a bit more exciting. They have so much flavour for so little points and so provide a real sense of satisfaction when you’ve gobbled them up. The recipe I’ve created below is delicious but its also easily adapted so throw anything you fancy into your mixture (I’ve done chorizo and paprika, smoked salmon and chive and ham and mushroom too!). You can even pop in some breakfast ingredients to make a lovely quick brekkie or even have them as a snack on the go!

Mexican Beef Chilli – 8sp

This recipe may look a bit daunting as it takes quite a long time to cook however its actually very easy to prepare and once in the oven, can basically be left to cook until its perfect. The smells coming out of the kitchen while it was in the oven were incredible too. This would be a great meal for a dinner party as everything can just be whacked in the middle of the table and everything can be prepared in advance. I whipped up a 0sp salsa and a fresh guacamole to go with it and I have to say, it was one of the nicest things I’ve tasted in ages. The chilli itself is only 8sp per person so you can treat yourself with a mixture of the accompaniments.
