I love that lean lamb mince is now readily available in supermarkets (at one time I used to have to hunt it down and stock up!!). Its a lovely flavour alternative to regular beef mince and can be used in lots of different ways to make a quick and easy evening meal. This one I created very quickly when trying to use up some of the ingredients I had in the house already.

Fakeaway Crispy Chilli Beef – 10sp
Crispy Chilli Beef is something I love to eat so, after picking up some extra lean quick fry beef strips in the woopsies aisle of Sainsbury’s the other day, I thought it was about time I came up with my own healthy version of this usually indulgent treat.
Korean Spaghetti Bolognese
I was originally going to post this new recipe a little later in the year but after seeing how well my last Korean recipe went down, and knowing a few of you have already bought the gochujung paste, I thought I would bring this recipe forward a little so you could use it up. Well that and it tastes INCREDIBLE so I was too excited to wait to share it with you.
Steamed Pork Buns (Char Sui Bao) – 5sp
I’ve had these lovely Chinese steamed buns so many times when I’ve eaten out and I’ve often wondered if I could make them Weight Watchers friendly. After craving them again this week I decided to give it a go and the result was a great success. My recipe below makes 12 buns which are 5sp each so you could either have 2 or 3 as a meal or serve as a starter and have 1 or 2 per person.
Tangy Harissa Lamb Meatball Tagine – 6sp
My hubby is a massive fan of all things lamb and all things spicy so tonight I decided the come up with a new recipe which combined both. The result was delicious. As you can see from the picture, the dish is bursting with colour and as a result, flavour. The tagine itself is only 6sp per person and I served this with a drizzle of fat free Greek yoghurt (0sp each) and a pitta for an extra 4sp per person. This meant the whole dish was 10sp and it was lovely and filling. If you have a very hungry other half you could even serve this with a little rice but in my view, the addition of chickpeas and a pitta are filling enough!
The ingredient list might look lengthy but most of the ingredients are store cupboard essentials. Plus the actual method is very quick and easy indeed!
Lovely Lasagne – 9sp
There is nothing better than an oozing, bubbling lasagne but the white sauce that it is usually loaded with is usually enough to send us way over our daily allowance. Using a lower point white sauce (such as my homemade recipe below or my alternative jarred suggestion) can bring the points down significantly.
Spicy Baked Harissa Meatballs – 9sp
I’ve always got some lean pork mince in the freezer and this week I fancied trying something new with it. These meatballs were just what we fancied. Easy to throw together and lovely and informal to eat, they are the perfect quick tea. If you want to make this even quicker, pop the meatball mix together, roll and chill the night before and its ready to cook the next day!
Pork Shnitzel – 9sp
I have to admit, the main reason I wanted to make a Shnitzel is so I could say the word Shnitzel a few times. Shnitzel, Shnitzel, Shnitzel. Such a good word! The second is because having had this a few times pre Weight Watchers and enjoying it, I thought it was about time to make a healthier, less fried and oily version.
Beef and Blue Cheese Burgers – 3sp
Having created quite a variety of burgers over the past couple of years, I realised this week that I hadn’t written any recipes for good old beef burgers. When scratching my head over what to pair with them I though the classic combo of beef and blue cheese would work quite nicely, and I was definitely right! These burgers are packed full of flavour and have just the right amount of blue cheese tang.

Picadillo, or spiced ground meat as its more simply known, is a dish that usually appears in Cuban cuisine. There are many different ways to make Picadillo but its usually made with either beef or pork mince. I’ve used pork mince here as I had it in the freezer.
