Who doesn’t love a good paella?! Some people are often a little dubious about making it as they think of it as something time consuming and fiddly to prepare. This recipe is anything but that. As a one pot dish, its minimal washing up and the taste and flavour you get from it is truely delicious!

Grilled Spiced Salmon with Avocado Salsa and Coriander Lime Rice – 8sp
Given my love for an avocado related weekend breakfast, I often have left over avocado lurking in the fridge through the week. Keen to include it within my main meals in a low SP manner, last night I thought it may be a nice addition with salmon.
Posh BLT – 8sp
People are always asking me for quick and easy lunch ideas and so I’m always on the look out for new ideas. I put this one together when I came across Warburton’s new Seeded Bagel Thins. For only 4sp they are a great alternative to a sandwich with bread. The recipe below is a twist on a classic BLT sandwich with a few added extras to ramp up the flavour.
Chilli Prawn Linguine – 8sp
I love a quick and easy pasta sauce recipe so prawns are the perfect ingredient to include in one. Taking less than 5 minutes to cook, they are difficult to get wrong. I used some lovely big raw king prawns (which were already deveined) which were lovely and meaty and filling. I like to cook my prawns from raw so I know they are as fresh as possible and so they can cook them in the garlic and chilli so that take on all the flavour. If you are funny about cooking prawns from raw though, there is no harm in buying the precooked ones and just heating them through in the sauce at the end.
Harissa Honeyed Pork and Cumin Spiced Veg Noodles – 8sp
I’m always on the look out for quick and easy dinner recipes which utilise some of the contents of my store cupboard. This recipe, created when I had some left over pork steaks, is exactly that. Most things in it I usually have in. Popping the ingredients together like this though really gave the pork a whole new lease of life. My OH was worried that it wouldn’t be filling enough given the spiralized veg noodles however I can confirm it really was! If you want to beef it up a bit more, you could also add some spiralized courgette. The flavours are lovely and best of all, the whole thing is ready in less than 15 minutes.
Sweet and Sour Chicken – 8sp
Always keen to try out new stir fries, tonight whilst brain storming for new flavours, I thought I would give Sweet and Sour a whirl. I’m not usually a fan of overly sweet dinner dishes so I fiddled with the sauce for quite a while to make sure it was the right balance of sweet, savoury and of course, a little spicy. If you like the regular chinese Sweet and Sour Chicken and don’t like spice, feel free to leave out the five spice and crushed chillies but they really do take this dish up another level.
Spicy Chicken Alfredo – 8sp
My sister has been asking me to make my own version of this classic Italian dish for a while now and so this week I finally got around to it. Haven eaten it many times when out myself I knew how it should taste and I wanted my version to be as close to it as possible. The end result was exactly as I wanted, creamy with a good spicy kick. Give it a whirl – you will never feel like you are missing out on eating out again!
Fish Taco’s – 8sp
Keen to create another Mexican recipe to feed my addiction, this week I decided to try and get some fish involved. Fish Tacos are something I have heard others rave about so I thought I would give creating my own version a whirl. The results were outstanding. They are lovely and filling and zinging with light and fresh flavours.

I’ve been waiting to give the whole cauliflower trend a run for its money for a while now and after experimenting with cauliflower rice, I thought it was about time I moved onto something that felt a little more indulgent.
Harissa Roast Salmon with a Fruity Cous Cous Salad – 8sp
When presented with the idea of making a three course meatless meal on Good Friday, I knew I was going to have to get creative in the kitchen and after doing a little research I came across this lovely little recipe online. I made a few of my own amendments to make it both lower in points and to make sure it was packed full of flavour and the result was incredible. The smell of the dish was to die for a my sister, who has always been dubious about trying salmon, absolutely loved it.
