Chimichurri steak is one of my favourite dishes to eat when I’m out so it’s been on my list of things to make for a while. Tonight, needing a meat fix, I decided to give it a whirl and it the result was delicious. The whole meal is lovely and light and summery with some delicious flavours and textures.

Lamb Kofta Kebabs with Tabbouleh and Greek Yogurt – 13sp
Avocado Baked Eggs with Bacon Bits and Soldiers– 5sp
I ADORE avocado. I just can’t get enough of it but it is quite pointy. As a result, I’m always trying to find new ways to include it within my meals so that I can both enjoy it but keep the points low. This recipe is an ideal was to do this. By scooping out some of the avocado to make room for the egg you reduce the points by another half. I reserved the avocado I scooped out and kept it a salad the next day!
Cinnamon French Toast – 5sp
I love eggy bread and this morning I really had a craving for something a bit sweeter. This was the perfect solution, nice and low in points but full of lovely fresh flavours. It’s the perfect summery weekend breakfast.
Goat’s Cheese and Pesto Bruschetta – 6sp
This was the lovely starter that I made on my meat free Good Friday three course meal challenge. It’s something that I’ve had a few times in Italian restaurants and it’s always really satisfying. Making a light version seemed like a great way to start off my meat free 3 course meal however if you did fancy a bit of meat, pop a slice of prosciutto on top of the pesto.
Harissa Roast Salmon with a Fruity Cous Cous Salad – 8sp
When presented with the idea of making a three course meatless meal on Good Friday, I knew I was going to have to get creative in the kitchen and after doing a little research I came across this lovely little recipe online. I made a few of my own amendments to make it both lower in points and to make sure it was packed full of flavour and the result was incredible. The smell of the dish was to die for a my sister, who has always been dubious about trying salmon, absolutely loved it.
Moroccan Stuffed Butternut Squash – 5sp
As you all no doubt know, we are blessed on Weight Watchers with the 0sp delight that is Butternut Squash. I’m a massive fan of it as a replacement for potatoes and even sweet potatoes so I’m always trying to find new ways to use it. Tonight, fancying something filling but low in points, I created this lovely delight which went down a storm. It tastes amazing and really is so filling and satisfying.
Carrot and Coriander Soup – 0sp
This is a really simple soup that I make time after time as its so simple to make but tastes amazing! I often make it on a Sunday night and because it makes 4 portions it does my packed lunch for work alllll the way til Thursday!
Ham and Houmous Salad with Cous Cous – 5sp
I get lots of folk who are doing Weight Watchers often saying that they struggle to find low pro point, filling but tasty lunches. As you all probably know, I’m a huge salad fan and this is one of the regulars in my repertoire. As it’s so filling, it usually stops me fancying an afternoon snack later on in the day! I use Aldi’s cous cous as it’s the tastiest one I have had and is only 39p per pack (each pack does two lunches too!). I vary the flavours between the spicy and the lemon and coriander but both work nicely with the recipe below. I usually make two portions in one go so I don’t have to be organised two days in a row.
Cheat’s Eton Mess – 4sp
Desserts….not something I’m ever too fussed about having straight after my tea but, on the odd occasion (usually when other people are having them) I start to think ‘well why can’t I!?!’. In general I never think to reach for cake or sweet treats after savoury but, after a big family Sunday lunch at my parents, the cakes, scones, pavlova and tarts all come out of their devlish boxes and make their way onto the table. Having seen the lovely multi coloured treats the cravings kick in and this is where I whip out my favourite dessert weapon…..MERINGUE!!
