Meatball Marinara Sub – 9sp

At book club last month we had an Italian themed buffet. I whipped up my Mozzarella, Pepparoni and Pesto Boccones and I suggested my friend bring along some mini Polpette (meatballs) to which she delightfully obliged. After whipping them up in the afternoon, she told me she had actually used Quorn meatballs and as an avid meat eater, I have to say I was a little cautious about trying these veggie balls (I hadn’t actually tried Quorn since my university days!). I have to admit however, I was very pleasantly surprised to find that not only were they delicious, they were also low in points and best of all, could be cooked from frozen. I’ve been planning to test my meatball marinara recipe again for a good while now and so I thought to myself, why not incorporate these meatballs into the recipe. Not only are they tasty but the texture is perfect to be sat inside a bun with oozy tomato sauce.

Mackerel Kedgeree – 6sp

Mackerel is a fish that both the hubbie and I love and it’s often on offer /reduced (or on a ‘whoopsies’ as our local supermarket likes to call it) near the end of the day in larger supermarkets. As a cheap and flavoursome fish, mackerel is great way to add oily fish to your diet without adding in too many extra points.

Curried Beef Satay – 6sp

Satay sauce from the Chinese takeaway is one of my favourite treats. Meaty, nutty with a nice little kick, it goes with so many different treats, I always find it irresistible. Last week, after having a serious craving for some, I decided to try and create a healthy version of this sauce and make it into a whole meal. All the flavour and none of the guilt! The result was delicious, a lovely different flavour and a really easy dinner to rustle up.

Chicken, Beans and Greens with a Harissa Feta Dressing – 2sp

My hubby and I always roast a chicken on a Sunday night so that we know during the week we will always have something healthy to hand for lunches or quick evening meals. Easily bored of eating the same thing, I’m always trying to come up with new ways to use this chicken in salads and soups, keeping the smart points low but the flavour level high. This recipe is one I first started making last summer and it’s been a firm favourite ever since. I love the easy harissa feta dressing as it really lifts the salad ingredients and the ingredients in it are usually bits I always have lurking around the cupboards/fridge. If you don’t have a blender for the dressing, simply mash the feta into a paste before mixing through the other dressing ingredients. If you prefer your beans cold, these can be drained and added straight to the cooked kale and green beans.

Easy Rocky Road – 7sp  

I don’t have much of a sweet tooth but every now and then I quite enjoy a little chocolaty treat with my afternoon cuppa. There’s a great selection of low sp goodies out there that you can buy from both the WW shop and general supermarkets (B&M do a cracking selection too!) but sometimes it’s nice to be able to whip up your own easy and tasty treats. The best thing about this recipe is that it’s a no bake dish so other than melting and mixing a few store cupboard ingredients, you just have to wait for it to set.

Buffalo Chicken Burgers with Blue Cheese Sauce – 3sp

I love buffalo sauce and the combo of that tangy orange delight paired with creamy blue cheese is one of my all-time favourites. After craving a burger this week, I decided to knock up a new recipe which would combine these two delicious flavours and the result was delicious!

The recipe below makes 8 burgers and each burger patty works out at 1sp. The sauce makes enough for 8 burgers and is 2sp per serving (when split between 8). If you aren’t planning on serving all the burgers within the same meal, I would still make all of the sauce as it can be kept in the fridge for a couple of days and used on things like salads and wraps too.

Very Lazy Slow Cooker Paste Pots – Chicken and Chorizo Stew – 5sp

The Slow Cooker

The slow cooker is one of my favourite kitchen accessories and something I know a lot of my followers regularly rely on to rustle up gorgeous meals with minimum preparation.

Being able to pop dinner in the slow cooker in the morning helps me to feel uber organised and ready for the day ahead and for me, there is nothing better than being greeted by the delicious smell of dinner bubbling away when I come home from work in an evening.

Drop Scones– 6sp

One thing I’m asked for a lot is a banana free version of the flourless pancakes that are popular with us WWers so when I woke up the other morning with a craving for some drop scones (or scotch pancakes as many call them), I set about creating myself some banana free, WW friendly ones (albeit these ones do have flour in them!!). The result was lovely, tasting very close to the real thing for many less points!

Crispy Asian Beef Salad – 10sp

I love a good pulled meat as well as anything that can be slow cooked in the oven (or slow cooker) so when one of my lovely followers sent me a message about recreating a lovely Crispy Asian Beef Salad she had recently eaten in a restaurant, I knew I would be giving it a whirl fairly quickly. The result was amazing, the beef is absolutely packed with flavour and the smell as its cooking is out of this world.
