My OH isn’t this biggest fan of fish (not that you would know the amount I make him eat it!) but we have recently discovered that he has a particular liking for seabass (after the revelation that was my Minted Pea and Seabass Risotto). As a result I thought that, to keep him interested, I would come up with another seabass dish to take his fancy.
Smoked Mackerel and Potato Salad in a Creamy Mustard Dressing – 10sp
Usually come six o’clock I am starving and looking forward to having a hearty meal for my tea but last night, both the Hubbie and I fancied something light and summery. Having a think about what we could have we both though a salad would do the trick but I wanted something filling enough so I wouldn’t be hungry later on!
Five Spice Salmon Boodles – 2sp
As you can probably tell by a lot of my recent recipes, vegetable noodles are a firm favourite in our house at the moment. Most supermarkets now sell the pre spiralised version and not only do they make a lovely quick and easy option for tea, but they are mostly 0 smart points.
Chicken Pathia – 1sp
I’m always keen to try a new curry recipe and so when my next door neighbour whipped this one up for me, I knew I had to recreate it for you all. I have adapted the original recipe to suit my own taste (so this version is a little spicier and zestier than the original) but I have to say, it is by far the nicest homemade curry I have tasted. Not only is it 1sp per person but it honestly tastes like it has come straight from an Indian restaurant.
Minted Pea Risotto with Seabass and Asparagus – 10sp
Risotto is a dish that I don’t often have time to make but always feels like a real luxury dish to devour. This week, having had a craving for risotto, I decided to pair it with another one of my favourite ingredients, seabass. Having never had the two together I wanted to find an ingredient to unite them and what better than some minted pea puree! And the result was this fabulous dish.
Beef and Blue Cheese Burgers – 3sp
Having created quite a variety of burgers over the past couple of years, I realised this week that I hadn’t written any recipes for good old beef burgers. When scratching my head over what to pair with them I though the classic combo of beef and blue cheese would work quite nicely, and I was definitely right! These burgers are packed full of flavour and have just the right amount of blue cheese tang.
Turkey Stuffed Courgette Boats – 2sp
This recipe came about after defrosting a pack of turkey mince and deciding to use up some of the contents of my cupboards. After scratching my head for a few minutes I got a few bits and pieces out and thought, lets see how this goes. Boy was I impressed with the result. Not only is it a quick and easy dish to put together, but the flavours are delicious. Best of all one portion is only 2sp!!
Mexican Omelette -3sp
The main buffet restaurant in the hotel we stayed at in Mexico was amazing. I’m usually very fussy about ‘buffet’ style food (I often feel like you never get a proper meal) but there were so many areas where fabulous food was being cooked fresh in front of you, I would probably have been happy to eat here every night (I didn’t though, there were another 9 restaurants to choose from!).
Prosciutto Wrapped Cod with Lemony Garlic Spinach – 6sp
Fish is a great option for an evening meal as not only is it packed with flavour and goodness, but it is so low in points – especially now fish is 0sp! After craving something fishy for tea last week, I put together this recipe using a lot of ingredients that I already had in my fridge and the result was delicious. Both light and summery yet filling and satisfying. Best of all, the whole dish can be ready inside 20 minutes!
Courgette Pizza – 9sp
Given the popularity of the classic low carb cauliflower base pizza alongside my love for all things courgette, I decided to try and covert my regular cauliflower pizza recipe into a courgette based pizza. The challenge was easier said than done but, after a few tries, I am happy to report I have finally perfected it. The texture is a little less firm that the cauliflower version however the taste is even better. I served this with a large side salad to keep it nice and fresh.
