Porridge oats are my staple winter breakfast and I often spend time thinking of ways to jazz up my plain old porridge. The little number is the perfect way to do just that. Not only is it warm and comforting, but the ingredients all come together to give you the most delicious carrot cakey breakfast. Very satisfying indeed!
Vietnamese Pork Meatball Salad ‘Bun Cha’– 9sp
Always looking for new ways to use up lean mince products, this week I thought it was time to combine that with some of my favourite Vietnamese Cuisine. The result is a lovely zingy fresh salad that is packet with gorgeous Asian flavours. This dish makes a lovely lighter evening meal (which I’m often looking before to have if I get back from the gym a little late) and would also make a lovely filling lunch.
Chicken Fajita Pasta – 9sp
One of our favourite go to meals in our house are Chicken Fajitas. Not only are the quick and easy to make but they are delightfully low in points and bursting with flavour. This week, after having my regular craving for Fajitas but having no wraps or salsa in the house, I decided to turn our favourite dish into a pasta dish. My OH loved this one. The flavours or the spices burst through whilst the sour cream mellows the whole dish out a little. The sprinkling of fresh avocado on top adds a lovely freshness too!
One Pot Paella – 8sp
Who doesn’t love a good paella?! Some people are often a little dubious about making it as they think of it as something time consuming and fiddly to prepare. This recipe is anything but that. As a one pot dish, its minimal washing up and the taste and flavour you get from it is truely delicious!

Fishcakes are something I love to have as a starter in a restaurant and are the perfect light lunch or dinner. Having not had them in a loooong time, tonight, with little else in the cupboards, I thought it was time to whip some together.
Chilli Chicken Tacos with Pineapple Salsa – 7sp
As most of you know I am a little bit obsessed with Mexican cuisine so this week, when I defrosted some chicken breast, I thought, time for a new recipe! Having wanted to get some pineapple salsa on the go for a while too, I thought now was the perfect time to pair them up.
Pork Shnitzel – 9sp
I have to admit, the main reason I wanted to make a Shnitzel is so I could say the word Shnitzel a few times. Shnitzel, Shnitzel, Shnitzel. Such a good word! The second is because having had this a few times pre Weight Watchers and enjoying it, I thought it was about time to make a healthier, less fried and oily version.
Squid and Chorizo Pasta – 10sp
I’m always a fan of meals that I can whip up using the contents of my cupboards/fridge/freezer. This recipe fulfills exactly that brief as I always have chorizo in the fridge and a large packet of squid rings in the freezer. Together they are a lovely pairing but when I was whipping up this pasta, I fancied incorporating a new flavour. Chipotle paste was the perfect choice, it adds a lovely smoky flavour to the dish and stands up well to the fishy flavour of the squid and fish stock. A fishy, meaty, smoky delight!
Cheesy Tepenade Stuffed Chicken – 5sp
I love a good stuffed chicken dish. Since chicken is now free too, it can be stuffed with a whole host of goodies and the points still remain nice and low. The result is a dish packed with flavour that provides real satisfaction and ‘value’ for your overall points total.
