Knowing how easy it is to cook up delicious and healthy meals quickly and easily has turned me into a bit of a picky eater when I’m eating out in cafes and restaurants. I have become a little inpatient with places which charge a fortune for food which is bland, oily and unsatisfying to the point where I just don’t see the point in eating it if it isn’t any good.

Harissa Honeyed Pork and Cumin Spiced Veg Noodles – 8sp
I’m always on the look out for quick and easy dinner recipes which utilise some of the contents of my store cupboard. This recipe, created when I had some left over pork steaks, is exactly that. Most things in it I usually have in. Popping the ingredients together like this though really gave the pork a whole new lease of life. My OH was worried that it wouldn’t be filling enough given the spiralized veg noodles however I can confirm it really was! If you want to beef it up a bit more, you could also add some spiralized courgette. The flavours are lovely and best of all, the whole thing is ready in less than 15 minutes.
Korean Beef Stir Fry – 13sp
I adore Korean food but unfortunately it is something I only really get to have on my trips to the capital for work. Spicy beef is one of my favourite dishes and so, deciding I wanted it up north for a change, I decided to give it a whirl.
Kangaroo Stroganoff – 10sp
I heard a lot about how lean kangaroo meat is so when I spotted it in Lidl I knew I would have to give it a whirl. Rather than just frying it like a normal steak I decided to try something different and the result was a lovely surprise. The meat was tender and tasty and the stroganoff sauce really complemented the kangaroo! You could serve this with rice either.
Moroccan Stuffed Butternut Squash – 5sp
As you all no doubt know, we are blessed on Weight Watchers with the 0sp delight that is Butternut Squash. I’m a massive fan of it as a replacement for potatoes and even sweet potatoes so I’m always trying to find new ways to use it. Tonight, fancying something filling but low in points, I created this lovely delight which went down a storm. It tastes amazing and really is so filling and satisfying.
Ham and Houmous Salad with Cous Cous – 5sp
I get lots of folk who are doing Weight Watchers often saying that they struggle to find low pro point, filling but tasty lunches. As you all probably know, I’m a huge salad fan and this is one of the regulars in my repertoire. As it’s so filling, it usually stops me fancying an afternoon snack later on in the day! I use Aldi’s cous cous as it’s the tastiest one I have had and is only 39p per pack (each pack does two lunches too!). I vary the flavours between the spicy and the lemon and coriander but both work nicely with the recipe below. I usually make two portions in one go so I don’t have to be organised two days in a row.
Melting Mozzarella Meatballs – 12sp
I love a good meatball dish and so when I started brainstorming ways to make them even more exciting, I knew I would have to give this one a go. Cheesy and gooey in the middle, baked to perfection in a lovely tomato sauce, these really are the ultimate Italian meatballs.
If you don’t want to fiddle on making to meatball yourself you could use shop bought meatballs and use all the mozzarella on top to bake it. If you do have the time I would highly recommend giving these ago. I made up enough meatballs for four people (20 meatballs) and left half (10) uncooked in the fridge for tea the next day.
If you prefer the sauce wet and saucy, use passata, if you like it a bit more dry, use the chopped tomatoes.
Chorizo Bean Stew – just 4sp!
I got home the day before payday and went to make tea and found I basically had no food left in the house save for a few bits in the fridge and some tins. The dinner which followed was therefore a creation of whatever I fancied! The result was a lovely thick and chunky soup/stew which made a nice four portions to box up and take for packed lunch.
Greek Lamb with Orzo and Feta – 12sp
I’ve had half a packet of orzo left in my cupboard for a good while now (since the last time I made my Pea and Ham Orzo) but I wanted to try and use it in a new way. Having seen lamb paired with orzo on Greek menus quite a lot I thought it was time I gave this a go and made it waistline friendly. The result was lovely, a lovely flavour and a really different texture. I served mine with a side salad (just mixed leaves, tomatoes and feta) and I served my OH’s with the feta straight on top. Do whichever way takes your fancy. Some of the ingredients below can be optional so I’ve put a little ‘O’ next to these ingredients, the recipe is better with them but would still be nice without.
Mini Sausage Rolls – only 2sp!
Following my recipe earlier this week for my festive Mince Pie Bites, next in the Christmas countdown are these delicious little treat which I have made many times as a lighter contribution to a festive buffet.
