Whenever we make a Thai curry we always have left over paste hanging round in the fridge so last night I threw this lovely dish together to use it up. It’s really easy to prepare, really quick to cook and tastes absolutely delicious! Don’t forget the lime at the end to give it a little lift!

Tom Yum Noodle Soup – 13sp

I love Thai food and so when I came across a jar of Tom Yum paste in Tesco I thought I would see what I could put together. Tom yum soup is not usually made with coconut milk, it’s more of a clear broth, but I added a little to mine for a creamier flavour (the other half loves a creamy dish). The result was incredible. So easy to put together and so fresh and filling, it really is worth giving a go. Feel free to omit the coconut milk for a lower points option. I used prawns as well as chicken as I had some in but again, feel free to leave out one or the other.

Kickin’ Chicken Kebabs – 8sp

I’ve had skewers in my kitchen drawer for months now so thought this weekend I would get them out. I decided to change up a recipe I previously posted (my Sticky Chicken Wings) and change it up, lowering the propoints even further. The result was delicious. I served these kebabs this time with 40g of rice (for an extra 4sp) however you could also make these with Butternut Squash chips for a 0sp option!

Chicken Katsu

I’ve seen katsu curry on the menu a few times at our local Japanese but it’s known for being rather high in points. Having been craving it for a while, this week I thought I would see if I rustle up a low point version and the result was delicious! I served this with 50g of rice per person and lots of green salad leaves. The chicken katsu itself if 5sp so you can add as much rice as you require, just be sure to add the points.

Spicy Szechuan Chicken Stir Fry – 8sp

I usually make stir fries from scratch (sauce and all) but there are some nights when I get home and frankly I can’t be bothered. I have been searching for something quick and easy to fix this for a while now and not found anything that took my fancy, until my friend suggested Asda’s fresh stir fry sauce mixes to me. They are nice and cheap (£1 each) and there is quite a variety to choose from. Knowing we had a busy two nights ahead, I picked up enough of everything to have stir fry two nights in a row and bought the Szechuan Sauce and Cantonese Sauce to mix things up.

Sticky Chicken Wings – 12sp

Whenever we go out to eat, my other half always chooses chicken wings if they are on the menu so when he decided to make a valentines meal on Friday, he thought he would try and make his own from a recipe he saw online. Since then I’ve adapted the recipe further to suit my own tastes and Weight Watching needs and it is just as delicious (and much nicer than any wings I’ve had in a restaurant)!

Jerk Chicken Stew with Rice and Peas – 9sp

I’ve wanted to try something with a bit of jerk seasoning in for a while but I just haven’t had the time to make the marinade from scratch! I came across Schwarz’ seasoning last time I was at the supermarket so I thought I would see if I could create something fast but different with it in the meantime. Don’t get me wrong, this is by no means an ‘authentic’ Jamaican jerk recipe but it’s a nice alternative when you just fancy a taste of something new.
