My sister has been asking me to make my own version of this classic Italian dish for a while now and so this week I finally got around to it. Haven eaten it many times when out myself I knew how it should taste and I wanted my version to be as close to it as possible. The end result was exactly as I wanted, creamy with a good spicy kick. Give it a whirl – you will never feel like you are missing out on eating out again!

Creamy Baked Chicken and Kale Gnocchi – 11sp
Gnocchi is a great store cupboard essential to have in so that you can whip up a delicious home made tea really quickly and simply. We often have it with a nice tomatoey sauce usually but tonight I thought I would try something different. The result was this delicious creamy baked delight.
Bacon Wrapped Avocado Stuffed Chicken -3sp
Avocado is one of my favourite vegetables but I’m always a little careful with it given it is rather high in points. I’ve wanted to use it as a stuffing for a while so I knew to do so I would have to beef it up with some 0sp ingredients.

My other half loves chicken satay from the Chinese takeaway, but knowing how naughty it is, it’s not something we have very often. I’ve therefore wanted to make my own healthy version of satay chicken for a while now and this week I decided it was time to give it a go.
BBQ Pulled Chicken Burgers with Sweet Potato Fries – 9sp
As soon as I tasted how good this BBQ sauce was in my BBQ chicken Quesadilla recipe, I knew it would also go perfectly in a burger, especially in one of Aldi’s amazing Brioche Burger buns which are only 5sp each!! Sweet Potato chips are the perfect accompaniment to this recipe to and add a real pub grub feel. If you fancy reducing the points further you could make BNS fries instead of sweet potato. This would make the dish 6sp per person.
Fakeaway Chicken Tikka Pizza – 9sp
I love try new pizza toppings and one of my favourites to have when I’m eating out is a Chicken Tikka Pizza. I therefore couldn’t wait to try and make my own healthy version so that I could indulge in it at home, guilt free.
Chicken, Mushroom and Spinach Risotto – 12sp
After the success of my last of my last experiment with Heck Chicken Sausages I decided to give them another go and come up with another recipe. This time I decided to go for a risotto and I have to say, these sausages are becoming one of my new favourites! If you can’t get a hold of the sausages in this recipe, you could replace it with diced chicken breast (around 360g) and fry this first instead of the sausages.
Chicken Meatballs with Sundried Tomato Orzo – 10sp
I’ve heard a lot about these Heck Sausages over the past few weeks so was over the moon today to discover that the Tesco nearest me stocks them. I’ve wanted to do chicken meatballs for a while but haven’t been able to get my hands on any chicken mince so I thought these sausages (out of their skins) would be the perfect replacement.

A few weeks ago I went out to a little café for lunch and I had a lovely curried chicken breast burger. It tasted so good I decided to make my own version of it, adding a few little Indian accompaniments.
BBQ Chicken Quesadilla – 9sp
Come a Sunday afternoon I often roast a nice big whole chicken that I can pull apart and use throughout the week for lunches and evening meals. It’s a great way to make sure you have fresh ingredients at hand and keep the cost down at the same time. As a result, I’m always looking for new ways to use up said chicken (as you will see by my last Lebanese Salad recipe).
Being a huge fun of pulled pork, I decided that I would give the whole pulled chicken a whirl but by speeding up the process a little. As a result I made a lovely and tasty chipotle BBQ sauce, poured it over the cooked chicken and voila!! The BBQ chicken in this form could be used in so many different ways (in a burger, a thin, with rice, with sweet potato or BNS fries…..) but I decided to try something new.
