As you can probably tell by a lot of my recent recipes, vegetable noodles are a firm favourite in our house at the moment. Most supermarkets now sell the pre spiralised version and not only do they make a lovely quick and easy option for tea, but they are mostly 0 smart points.

Turkey Stuffed Courgette Boats – 2sp
This recipe came about after defrosting a pack of turkey mince and deciding to use up some of the contents of my cupboards. After scratching my head for a few minutes I got a few bits and pieces out and thought, lets see how this goes. Boy was I impressed with the result. Not only is it a quick and easy dish to put together, but the flavours are delicious. Best of all one portion is only 2sp!!
Chicken and Pesto Boodles – 2sp
I think I may be a little bit addicted to veggie noodles, they are just so versatile! The real beauty is that they fill you whilst being 0sp. Whether you have a spiralizer or buy the pre spiralized stuff there are some really quick and easy ways to whip up a tasty and satisfying lunch/dinner.
Banana Chocolate Ice Cream – 4sp
Whilst Manchester might not get many sunny days, when we do, the temptation to indulge in a lovely cold iced treat is always strong. That’s why this ice cream is the perfect solution. You can make the ice cream itself 0pp but replacing the nutella with fruit such as raspberries and blackberries however just a little nutella and a few little extras make this little treat feel rather indulgent!
Mussels in a Spicy Tomato Chilli Sauce – 2sp
Lots of people that I speak to often say they love to eat mussels when they go out but are a bit nervous to make them themselves. I would have said the same until I gave it a go for the first time and now they are a regular in our house.
Mussels really are one of my favourite, quick go to meals when I am looking for something both cheap and easy and low in points. You get a huge portion for only 2sp so you can add to it as you please. I’ve cooked some spaghetti and stirred it through the sauce at the last minute and then served the mussels on top or I’ve just served it with a warm WW petite pan. If you add either of these, be sure to add the extra points.
Tuna and Red Onion Quiche – 2sp
I’m often asked for easy lunch recipes which don’t constitute soup or a salad so today I thought I would share one of my favs. This basis of this quiche recipe is an old favourite in our house and my family have been making it for years. You can add almost anything to it you fancy and you end up with the most lovely, healthy and filling lunch from it. Depending on how I am using my points for the day I would have either a quarter of the quiche with a large side salad or half the quiche with a small side salad. You really can add anything you fancy to this. I’ve added mushrooms, spinach etc and it always comes out lovely!
Chorizo and Red Lentil Soup – 2sp
Now the weather has got a bit colder and I’m starting to think about investing in my yearly pair of ear muffs (I somehow manage to snap them at the end of every winter) I thought it was about time I whipped up my first soup of the autumn. This is a gorgeous soup recipe which tastes like a real treat but at only 2sp per portion its a bargain smart points wise, especially considering the gorgeous smells and taste that ooze out of it!
