Pork Gyros Souvlaki with Mini Oregano and Paprika Baked Potatoes and Tzatziki – 11sp

After our holiday to Kos last summer (feels like years ago now!) the other half and I got a bit addicted to the gorgeous Gyros Souvlaki we sampled while we were over there. Before we came home I picked up a few packets of the spice mix to make my own and only just got round to making it recently. You could have it without the mini roasties for 8sp but for an evening meal, this addition makes to whole thing lovely and filling. I use pork shoulder as I think it takes on the spices a bit better but you could use pork steaks either.

Creamy Cajun Chicken Pasta – 12sp

Our freezer is getting rather bare at the moment as we are trying to eat our way through it before we buy anything new so one of the last remaining things in there was a couple of chicken breasts. I fancied trying something new, and has the OH loves a creamy pasta, I thought I would see if I could do a WW friendly creamy dish. This is really simple to make, tastes amazing and the OH polished the lot off in under five minutes!!

Spicy Indian Meatballs – 13sp

Me and my boyfriend are very much fans of spicy food and we got a bit sick of plain old Italian Meatballs so I had a little play around with a few ingredients and came up with this recipe. It may sound a little different to other meatball sauce recipe but it’s so tasty and satisfying it’s now a regular in our house and everyone I’ve made it for has requested the recipe! It’s also a fairly cheap recipe to make as you get 12 meatballs in the pack so I split them and use 6 at a time. £2 for 4 meals is not bad if you ask me!!

Slow Cooked Lamb Madras – 13sp

This was another recipe that had been scribbled onto a piece of scrap paper and given to me! Herbs and spices are one of the best 0pp treats to fill your cupboard with. If you have herbs and spices, even with a pretty empty fridge, you can usually manage to knock up something delicious. This recipe is the perfect example of that as you don’t need too many fresh ingredients.

Welcome to Skinny Kitchen Secrets!

So what is this blog about about I hear you ask! Back in September 2012 I decided it was time for a change in my life. It was time to lose the weight that I had steadily been gaining for the previous four years and keep it off for good. I signed up for Weight Watchers and realised that, through the plan, I could combine my love and passion for good food and cooking with my new diet to produce the most wonderful tasting and filling meals whilst still losing weight.

Through creating and consuming these recipes, I realised very quickly that by making a few small substitutions and eating the right amount of certain foods, I could have a fabulous diet without feeling like I was missing out on anything. In this way I found you could eradicate the ‘guilt factor’ from many meals which I once thought would be off limits.

Now 52lb’s down, and having maintained my weight for over a year, I am still trying out new ideas, tips and recipes to keep food tasty and exciting.

This blog will therefore be filled with the low propoint recipes and ideas that I have already shared with many and those that I try out in the future. Some of the recipes are my own, some are shared from family and friends and others converted from cookbook’s and online recipes that are a bit naughty in propoints. The one thing they all have in common is that they are all portioned out and pointed up to make it as easy as possible for you to follow the plan yourself and get to your goal weight!

The point calculations are my own, are subject to change and have been worked out using the wonderful online ‘Recipe Builder’ on the Weight Watchers website.
