With the promise of devouring a carb free bread substitute to dip in soup or make little sandwiches with, I knew from the moment I heard about cloud bread that I had to give it a go. I’ve made this lovely little treat a few times now as I wanted to perfect the recipe before I shared it with you all.
Buffalo Chicken Soup – 4sp
My Hubbie LOVES chicken wings so when we went to Mexico last year and one of the bars pretty much had them on tap, he was in his element. One of his favourite sauces to have them lathered in was the lovely, spicy Buffalo sauce and so as soon as we got home I tracked down a bottle of the lovely stuff. It was much easier to find than I was anticipating as I found most big supermarkets sell it (I’ve seen it in Tesco and Sainsbury’s).
Delicious and Nutritious – A Day at Betty’s Cookery School
So I’ve finally had a chance to sit down and write a little bit about the fabulous Bloggers Event I was invited to and attended at Betty’s Cookery School last week. Betty’s is one of those places where its reputation precedes itself. Every time I go to a town with one, there is a queue out the door and round the corner to get in, so you can imagine how excited I was to be invited to a day where these guys were going to teach me some new skills and dishes!
Venison Steaks with Blackberry Sauce, Creamy Mash and Greens – 9sp
I’m not a massive fan of the traditional Sunday dinner. I have nothing against them, I just think they are rather a lot of hassle for what you get at the end. That said, me and the hubbie do enjoy something meaty and warming come a Sunday so this recipe is the perfect option. The dish really has the wow factor, its both low in points, quick and easy to make and delicious.

Boxing Day Leftovers – Asian Turkey Salad – 2sp
Christmas is one of my favourite times of the year but for us Weight Watchers, the joy of the festive season often comes alongside a side helping of guilt at the food we may consume which we usually wouldn’t allow ourselves.
Having savvy ways to use up leftovers is not only way the perfect way to keep your portions under control on the big day, but it will also save you a lot of time and money at a manic (and frankly rather expensive) time!! The lovely Asian salad is one of my favourite ways to use up left over Christmas Day turkey. Its packed with flavour and lovely and light and healthy. Best of all, its only 2sp. The perfect Boxing Day lunch!

If you fancy making this lovely salad even more filling, you could also fry up some egg noodles and spilt between the bowls for an extra 5sp per person.
Spicy Baked Harissa Meatballs – 9sp
I’ve always got some lean pork mince in the freezer and this week I fancied trying something new with it. These meatballs were just what we fancied. Easy to throw together and lovely and informal to eat, they are the perfect quick tea. If you want to make this even quicker, pop the meatball mix together, roll and chill the night before and its ready to cook the next day!

Smoked Mackerel Risotto – 13sp
I really fancied a different risotto this week and this one really hit the spot. It’s a lovely big bowl of goodness and really filling too. Sometimes risotto can be a bit time consuming to prepare but as you don’t have to actually cook any meat, this recipe is speedy and fuss free!
Minted Pea and Ham Soup – 3sp
This recipe was made at the special request of a lovely lady called Ruth who requested a recipe for a pea and ham soup a few weeks ago. Well ask and you shall receive, here it is Ruth!!
This recipe calls for 200g cooked gammon/ham. You can either buy this pre cooked or you can cook a joint yourself. I bought a huge joint for around £4, boiled it and then once shredded, froze the rest in portions to use in other meals. Cooking it myself also meant that I had the boiling water (aka homemade stock) which was lovely. A ham stock cube would be just as good though.
