Meatballs are one of my favourite go to quick and easy dinners as they take hardly any preparation and can be ready in under 15 minutes. These meatballs in particular are delicious with my other favourite at the moment, 0sp Butternut Squash Noodles, or Boodles as Sainsbury’s like to call them. They made for a lovely filling dish but allow you to keep the smart points for the whole meal nice and low.
Sweet Potato, Butternut Squash and Chorizo Hash, Smashed Avocado and Poached Egg Stack – 8sp
Brunch, probably my favourite meal of them all (mostly because it’s acceptable to have a glass of prosecco with it). The beauty of a combined meal means you can also afford to spend a few further points on it than you would in breakfast or lunch separately and this recipe is certainly worth doing just that for!
Having seen someone tucking into a hash stack at a local café (and practically drooling over their plate) it I knew I would have to make my own healthy version of this lovely colourful dish. The result was delightful. If you want to alter the amounts of sweet potato vs BNS feel free to do so but remember to amend the points to suit (pop it back through the recipe creator). Otherwise give it a whirl, you won’t be disappointed!
Note: I buy the pre diced mixed packs of sweet potato and BNS from Sainsbury’s for this recipe to save chopping up a whole one of each. If you can’t find this and have to use one of each, roast the rest and whack it in a soup!
Aromatic Lamb and Giant Cous Cous – 13sp
I love that lean lamb mince is now readily available in supermarkets (at one time I used to have to hunt it down and stock up!!). Its a lovely flavour alternative to regular beef mince and can be used in lots of different ways to make a quick and easy evening meal. This one I created very quickly when trying to use up some of the ingredients I had in the house already.
Spicy Chicken Burgers with Gochujung Chilli Slaw – 4sp
Following on with my obsession with all things Korean, I created this recipe after a visit to our local food market where my hubbie indulged in a Korean Fried Chicken Burger. Keen to make my own healthier version, I ditched the deep frying and went for a much healthier griddle instead.
Baked Cod with Ultimate Pesto Mash and Greens – 8sp
I love a good fish dish so I am always thinking of different ways to combine a light and low smart points fish dish with something that will fill up my hungry hubbie. This week, having had some sweet potatoes left to use up, I thought I would get some mash on the go. This mash is inspired by my lovely Loaded Sweet Potato Skins from a while back, with many of my favourite flavours rearing their heads once again, this time in mash form.
Fakeaway Crispy Chilli Beef – 10sp
Crispy Chilli Beef is something I love to eat so, after picking up some extra lean quick fry beef strips in the woopsies aisle of Sainsbury’s the other day, I thought it was about time I came up with my own healthy version of this usually indulgent treat.

My hubbie and I love all things hot and so I’m always on the lookout for new spicy additions to our weekly menu. After visiting a food festival a few weeks ago and enjoying the most delicious Jamaican brown chicken wrap I decided to give this dish a go for myself by transforming it into a stew.

A good tuna steak is a real treat but not something we often eat in the house so this week, after having a real craving for it, I decided to pull together a new recipe which used this lovely fish with a few other fresh tasting flavours.

My chicken and chorizo jambalaya is one of my most popular recipes and I’m also a big fan so last week, when I was thinking of ways to jazz up my jambalaya, this idea hit me and I knew I had to give it a go. The result was delicious, filling and yet packed with flavour, you would never believe that the bowl food of food that I ate at the end was only 6sp. Even better, it now means I have two delicious recipes for jambalaya…winner!

Now as most of you probably know by now, I love food and love discovering new additions to my kitchen so when Weight Watchers set me a new food challenge recently, I was excited to get stuck in and give it a go.
The question…. would I rather spend a Friday evening cooking a Weight Watchers Chicken Jambalaya from scratch or, would I rather have one of the new Limited Edition Weight Watchers ready meals, and, in the time I would have spent cooking, have a bath, chill out and maybe pop on a face mask instead.
