To me, chicken and chorizo are a dream combination so I always love a new way to get them involved on the same plate. This week these two ingredients were pretty much all I left in the fridge so I thought, I know, I’ll stuff them all together.

Turkey and Avocado Burgers – 1sp
Turkey breast mince is one of my new favourite ingredients. Whilst it may not taste of much on its own, a few 0sp additions make it truly delicious. Best of all, the 2% fat lean turkey breast mince (I’ve bought it in Sainsbury’s and in Tesco’s) is now 0sp on the new flex plan!
Chicken, Bacon and Leek Pasta – 12sp
I don’t use leeks as often as I would like so this week when I picked some up, I decided to pop together a new recipe to try and get me cooking them more often. Leek paired with chicken and bacon is a classic combo often found in a chicken pie. The combination here with pasta is delicious. It is both lovely and silky and creamy whilst not being too naughty. The introduction of pesto really lifts the flavour too. If you fancy you could use the sauce below as a pie mixture. Simply let it cool and then pop into individual pie dishes, top with the pastry of your choice and then bake. I like it as a pasta though as its quick and oh so satisfying.
Griddled Cajun Chicken – 3sp
On New Year’s Eve the OH and I headed up to Scotland with friends for a celebration. Heading out for lunch, we ended up in a lovely cosy little pub with a mouth-watering food menu. Keen to not over indulge before the excess of the evening ahead, I picked out what I thought was the healthiest thing on the menu and hoped for the best. I was thrilled when the dish arrived and had both an abundance of 0sp elements, but was also bursting with flavour.
Spinach, Mozzarella and Sun Dried Tomato Stuffed Chicken – 4sp
Chicken breasts are always a great thing to keep in the freezer. They are so versatile, there are a million things to do with them but one of my favourites is to stuff them with whatever is in my fridge. This recipe is a great one as the ingredients are things I almost always have in. The flavours in the chicken are delicious and the light, creamy sauce really add a luxury feeling to the dish. I serve this with asparagus and 3sp of either mashed potato or oven roast potatoes for a total of 13pp.
Thai Turkey Burger with Cucumber Relish – 6sp
For me, there is nothing better than coming home after a long day and tucking in to a nice juicy burger. One of my favourite things about Weight Watchers is that you can do just that and not have to feel guilty in the slightest!
Mexican Stuffed Peppers – 5sp
Turkey mince is a great addition to any freezer when you are trying to keep healthy. Not only is it low in fat but it’s also really cheap. The selection of recipes out there which use it however are rather meagre if you don’t fancy going to the effort of making meatballs or burgers. That’s why, this week, I decided to try something a bit different….stuffing it into some peppers!
Spicy Chicken Alfredo – 8sp
My sister has been asking me to make my own version of this classic Italian dish for a while now and so this week I finally got around to it. Haven eaten it many times when out myself I knew how it should taste and I wanted my version to be as close to it as possible. The end result was exactly as I wanted, creamy with a good spicy kick. Give it a whirl – you will never feel like you are missing out on eating out again!
Creamy Baked Chicken and Kale Gnocchi – 11sp
Gnocchi is a great store cupboard essential to have in so that you can whip up a delicious home made tea really quickly and simply. We often have it with a nice tomatoey sauce usually but tonight I thought I would try something different. The result was this delicious creamy baked delight.
Chicken Satay Kebabs – 4sp
My other half loves chicken satay from the Chinese takeaway, but knowing how naughty it is, it’s not something we have very often. I’ve therefore wanted to make my own healthy version of satay chicken for a while now and this week I decided it was time to give it a go.
