I’m often asked for low propoint but impressive starter dishes for the Weight Watchers out there trying to cook a three course meal. I’ve come up with loads of different options for this but this has to be one of my favourites. Who doesn’t love a prawn cocktail!! But usually it is lathered with a creamy dressing and some tiddly prawns and not much else.

Spicy Prawn Stir Fry with Carrot and Courgette Noodles – 4sp
I’ve had a hand held spiralizer in my kitchen drawer for a while now and it hasn’t come in too handy, mostly because the noodles it produces are rather thin and flimsy! After having a whirl on an amazing table top Hemsley and Hemsley Spiralizer at a recent Weight Watchers photoshoot I knew I had to have one (albeit mine looks the same but was £12 from The Range).
Tom Yum Noodle Soup – 13sp
I love Thai food and so when I came across a jar of Tom Yum paste in Tesco I thought I would see what I could put together. Tom yum soup is not usually made with coconut milk, it’s more of a clear broth, but I added a little to mine for a creamier flavour (the other half loves a creamy dish). The result was incredible. So easy to put together and so fresh and filling, it really is worth giving a go. Feel free to omit the coconut milk for a lower points option. I used prawns as well as chicken as I had some in but again, feel free to leave out one or the other.
Speedy Seafood Pasta – 8sp
While we were away in Kos in the summer my friend ordered herself the most gorgeous seafood pasta, which, for the next ten minutes we all stared at in jealousy! It reminded me of this lovely easy pasta which I tried out a while ago and, having craved it continuously since we got back, it’s now a regular dish on our weekly menu! It’s so quick and easy and can be made in around 20 minutes from start to finish. It’s a nice change having seafood in a pasta and at only £2.00 for a mixed pack of seafood, its nice and cheap too!
