I got a giant portion of lean pork mince from Morrison’s with my meat vouchers so I split it into three. Now usually I make my Sweet Chilli Chorizo Burgers or some meatballs with pork mince but I really wanted to make something with it last night that didn’t require any fuss (i.e blending or getting my hands dirty). I’ve had lettuce cups a few times in both Thai and Korean restaurants so I thought why not try and recreate them at home myself!

Spanish Sausage and Asparagus Risotto
I love a good cooking programme but often find that the recipes that some of these TV chefs come up with are rather indulgent on the calorie front. Watching Gino D’Acampo cook up a sausage risotto was no exception with over 100g of butter in the original. Nevertheless my mouth was watering as I watched Gino rustle it up and so I knew I needed to make my own version as soon as I could.

I always head down the ‘world foods’ aisle in my local supermarket whenever I’m in need of a spice refill (you get twice as much for half the price just one aisle away from all the regular supermarket range!) Many a time I’ve walked down there and looked at the polish food range and all the lovely meaty goodness they have on offer but I’ve never know what to try. Then I came across a recipe that used these lovely smoked sausages and so I used it for a bit of inspirations to make this quick and easy dish. The sausage I used in this recipe was from Aldi and is a lovely smokey delight. I always thought smoked sausages would be a bit pointy but when I worked it out it was actually way less than I anticipated meaning a very filling, low sp dish!
