Having some ‘normal’ healthy food between Christmas and New Year is something I always crave but, given the manic few days I’ve usually had, I can never be bothered to faff around too much. That’s why this recipe is a perfect one to whack out in the post Christmas/ pre New Year period. The meatballs themselves are the exact same meatballs I used in my Lamb Kofta Meatball Kebab recipe so if you made this and made extras, this one will be nice and easy to whip up! If you don’t have them pre made or can’t be bothered to rustle them up from scratch, feel free to use any pre made meatballs that you might get in the supermarket.

Chicken Enchiladas – 11sp
Fajitas are one of my favourite quick and easy meals so naturally I also love an enchilada. Most enchilada recipes you find are stuffed only with chicken and cheese (and sometimes refried beans) so to reduce points and up the fillingness of these enchiladas, I’ve packed them with veg too.
Lamb Kofte Meatball Kebab – 10sp
My other half loves a kebab. I mean LOVES a kebab. So, always keen to try and convince him to go for the healthy homemade option rather than the crusty and uber calorific shop bought version, I thought I would try a different take on one this week.
Twisted Eggs Benedict – 4sp
I adore brunch. It has fast become my favourite meal of the weekend. Whether I make it in the house or we eat out, I love the variety of foods and flavours you get at this unique meal time. This weekend I visited one of my favourite brunch cafe’s and indulged myself in their self styled ‘bacon and eggs’. Granary toast, delicious bacon, poached egg, avocado, pesto dressing and hollandaise sauce, it was absolute heaven! However as nice as it was, I knew I couldn’t be indulging like this every weekend so I decided to make my own low propoint version of the dish.
Fish Taco’s – 8sp
Keen to create another Mexican recipe to feed my addiction, this week I decided to try and get some fish involved. Fish Tacos are something I have heard others rave about so I thought I would give creating my own version a whirl. The results were outstanding. They are lovely and filling and zinging with light and fresh flavours.
Banana Chocolate Ice Cream – 4sp
Whilst Manchester might not get many sunny days, when we do, the temptation to indulge in a lovely cold iced treat is always strong. That’s why this ice cream is the perfect solution. You can make the ice cream itself 0pp but replacing the nutella with fruit such as raspberries and blackberries however just a little nutella and a few little extras make this little treat feel rather indulgent!
BBQ Pulled Chicken Burgers with Sweet Potato Fries – 9sp
As soon as I tasted how good this BBQ sauce was in my BBQ chicken Quesadilla recipe, I knew it would also go perfectly in a burger, especially in one of Aldi’s amazing Brioche Burger buns which are only 5sp each!! Sweet Potato chips are the perfect accompaniment to this recipe to and add a real pub grub feel. If you fancy reducing the points further you could make BNS fries instead of sweet potato. This would make the dish 6sp per person.
Melting Mozzarella Meatballs – 12sp
I love a good meatball dish and so when I started brainstorming ways to make them even more exciting, I knew I would have to give this one a go. Cheesy and gooey in the middle, baked to perfection in a lovely tomato sauce, these really are the ultimate Italian meatballs.
If you don’t want to fiddle on making to meatball yourself you could use shop bought meatballs and use all the mozzarella on top to bake it. If you do have the time I would highly recommend giving these ago. I made up enough meatballs for four people (20 meatballs) and left half (10) uncooked in the fridge for tea the next day.
If you prefer the sauce wet and saucy, use passata, if you like it a bit more dry, use the chopped tomatoes.
FAKEAWAY – KFC! – 5sp
Who doesn’t love a good KFC? I know I do but I never allow myself to have it anymore given how calorific it is. Not one to be told I can’t have anything, I decided to create my own. I’ve been experimenting with a few different versions of this recipe and this one is definitely my favourite! It’s really quick and easy and best of all, can just be bunged in the oven and left to sizzle.
Thai Chicken Panang Curry – 13sp including rice
I recently visited my first ever Thai restaurant (having avoided them as a Weight Watcher because of the whole full fat coconut milk danger) and was absolutely bamboozled by the menu. Not wanting to get something I’ve tried before I decided to go for the Panang Curry as it was described as a dryer curry than your regular Thai red curry (so I assumed less fatty coconut milk). What a revelation it was, it was truly amazing!! Full of gorgeous flavour, not too saucy and so moreish it was unbelievable. As soon as I finished I knew it has to go straight to the top of my list of recipes to make Weight Watchers friendly.
