Harissa Chicken with Cous Cous Salad – 7sp

I’m always trying to come up with new, quick and easy weekday and ‘on the go’ lunches using up the contents of my fridge. A few weeks ago, being once again in this dilemma, I threw together this recipe and was more than pleasantly surprised with the results. For only 7sp you get a lovely, filling dish packed with flavour and punch. It’s the perfect dish to whip up if you’ve got back on the wagon post Christmas/New year and want healthy and flavour all in one!

Prawn Nasi Goreng – 6sp

Nasi Goreng literally translates as ‘fried rice’ in Indonesia. This delightful dish is a great option if you are looking for something really straight forward, quick and tasty. I’ve just used a shop bought paste here as it’s not too many points and is a lovely flavour. I haven’t added any extra chilli as it already has a nice kick but you can always add some crushed chillies at the end if you like things really hot. I will also be posting a recipe with my own paste but since lots of you are asking for this recipe to make this week, I thought I best not keep you all waiting! I got my paste in Tesco but I know lots of other supermarkets do their own version too.

Steak, Brown Ale and Blue Stilton Pie – 13sp

Much to my family’s disappointment, I’m just not a fan of Shepherd’s or Cottage Pie. Nothing to do with the taste or flavour, I just can’t handle the texture of mince with mashed potato for some reason! Keen to make a nice, wintery and warming meal this weekend, I decided to put a bit of a twist on the regular Cottage pie by replacing the traditional beef mince with some chunky beef stewing steak and turning the whole thing into more of a Steak and Ale pie vibe. The addition of the stilton to the mash is wonderful, it adds a lovely tang to what is a smooth and comforting pie topper. If you aren’t keen on blue cheese, simply leave this out. If you do, the points are 10sp per portion.

Speedy Tomatoey Italian Meatballs – 6sp

Meatballs are one of my favourite go to quick and easy dinners as they take hardly any preparation and can be ready in under 15 minutes. These meatballs in particular are delicious with my other favourite at the moment, 0sp Butternut Squash Noodles, or Boodles as Sainsbury’s like to call them. They made for a lovely filling dish but allow you to keep the smart points for the whole meal nice and low.

Chicken Tikka Jambalaya – 6sp

My chicken and chorizo jambalaya is one of my most popular recipes and I’m also a big fan so last week, when I was thinking of ways to jazz up my jambalaya, this idea hit me and I knew I had to give it a go. The result was delicious, filling and yet packed with flavour, you would never believe that the bowl food of food that I ate at the end was only 6sp. Even better, it now means I have two delicious recipes for jambalaya…winner!

Pork and Prawn Gyoza – 6sp

Gyoza are one of my favourite ways to start a Chinese or Asian meal. These lovely little dumplings are always packed with flavour and never feel too naughty. Having regularly craved them at home, this week I decided to give them a whirl myself.

You can buy pre made gyoza skins in Chinese or Asian supermarkets which would make the whole process below a bit less fiddly/time consuming (I will be doing this next time!). Continue reading
