This is a great meaty recipe and is another great low pro points option. It requires minimal chopping and not too many ingredients so can be thrown together in around twenty minutes.
Ingredients
Serves 2 = 9sp each if counting
4 x Weight Watchers Pork Sausages
Chestnut mushrooms chopped into chunks (as many as you like, I use half a pack)
1 red pepper, diced
2 garlic cloves, finely chopped
1/2 tsp of paprika and smoked paprika
½ tsp fennel, chilli flakes and oregano
½ tbsp balsamic vinegar
400g of chopped tomatoes
1 chicken stock cube
Pinch of sugar
Handful of spinach, roughly chopped
120g Pasta, dried
Method
Remove and discard the skin from the sausages and crumble the sausage meat into a pan (I use a frying pan so it cooks as quickly as possible). Cook the sausage meat in 1Kal until lightly browned. I usually add a little bit of water as I find the sausages stick to the pan . Once the sausage meat is nicely browned, add the mushrooms, peppers and garlic and cook for a few minutes until the mushrooms and peppers start to soften.
Next add the balsamic, herbs and spices and cook for another few minutes. Add the chopped tomatoes, stock cube and a pinch of sugar and give a good mix. Pop your chosen pasta on at this point for 10-12 minutes. Leave the sauce to simmer while the pasta is cooking. Once it is al dente, drain the pasta and add to the sauce. Combine well, add the spinach and then simmer for another minute or two to let the spinach wilt.
Serve with a little shake of parmesan if you fancy, I sprinkled 10g on top for 1 extra sp!
