I’ve had these lovely Chinese steamed buns so many times when I’ve eaten out and I’ve often wondered if I could make them Weight Watchers friendly. After craving them again this week I decided to give it a go and the result was a great success. My recipe below makes 12 buns which are 5sp each so you could either have 2 or 3 as a meal or serve as a starter and have 1 or 2 per person.
A Taquito is something I had never tasted or even heard of before I went visited Mexico and since it has been a whole year since we jetted off, I thought it was time to come up with another recipe inspired by my time there.
A Taquito is simply a rolled up, stuffed tortilla. Usually fried, these lovely creations are rolled tighter and so are thinner than an enchilada, and the top is not covered in sauce in the same way an enchilada would be.
When asking what recipes you would like to see me create, Mac and Cheese is without fail, always the most requested so I thought it was about time I got around to creating a healthier version of it.

I love cooking from scratch and turning a fridge/cupboard full of ingredients into a new, healthy and delicious tasting meal but like most people, I am often a bit pushed for time when it comes to mid-week dinners.
There is nothing better than an oozing, bubbling lasagne but the white sauce that it is usually loaded with is usually enough to send us way over our daily allowance. Using a lower point white sauce (such as my homemade recipe below or my alternative jarred suggestion) can bring the points down significantly.
Back before my sister could cook she used to absolutely love the shop bought pots of mascarpone sauce. Whenever I see them in the shops now they remind me of her (not that she would buy one now being quite the cook herself!!). This week however, when I spotted a pot of Tesco’s light mascarpone in the shops, I thought I might try my own take on her old favourite.
Usually I would class a stew as a winter recipe but this one is so easy and tasty that I often make a big batch at the start of the week and take it for my lunch Monday- Thursday. As its still quite chunky its really satisfying and the sour cream adds a lovely fresh taste. If you have it in the evening, any left overs can be frozen for another day (just freeze it before you add the sour cream). I had it as it is but often, when the OH was ravenous so I threw a few new potatoes into his. This is a classic Hairy Bikers recipe that I converted into a lower point options.
