Who doesn’t love guacamole. It basically a combination of all my favourite foods/flavours, avocado, lime, chilli and mexico. You can whip up this guacamole so quickly and whack it as an accompaniment to most dishes to up the flavour. I add a fresh chilli for some real heat but if you don’t like it too hot (or don’t have any chillies handy) it is just as good with a large pinch of chilli flakes. I keep everything nice and chunky so its got a good bite but if you prefer it smooth mash the avocado well and chop everything a bit smaller.
Pork and Mango Picadillo – 5sp
Picadillo, or spiced ground meat as its more simply known, is a dish that usually appears in Cuban cuisine. There are many different ways to make Picadillo but its usually made with either beef or pork mince. I’ve used pork mince here as I had it in the freezer.

Well now that the May magazine has finally hit the meetings I can start talking about the latest amazing opportunity I’ve been secretly working away on. As a child Easter was always bursting with chocolate, treats and excitement. As an adult its all about the loooooong 4 day bank holiday weekend, catching up with family and friends at home in Newcastle and avoiding chocolatey stuff where ever possible.

To me, chicken and chorizo are a dream combination so I always love a new way to get them involved on the same plate. This week these two ingredients were pretty much all I left in the fridge so I thought, I know, I’ll stuff them all together.

Knowing how easy it is to cook up delicious and healthy meals quickly and easily has turned me into a bit of a picky eater when I’m eating out in cafes and restaurants. I have become a little inpatient with places which charge a fortune for food which is bland, oily and unsatisfying to the point where I just don’t see the point in eating it if it isn’t any good.
Slaw Recipes
Who doesn’t love a good slaw. Whether it be to go with a burger, grilled meat or BBQ it is the perfect ‘side’ accompaniment to many a dish. I’ve created many slaw recipes to go along with my recipes so I thought it might be useful to have them all in one place so. The method for each is simply mix all the solid ingredients together, mix the dressing in a separate bowl and then mix all together!

Grilled Spiced Salmon with Avocado Salsa and Coriander Lime Rice – 8sp
Given my love for an avocado related weekend breakfast, I often have left over avocado lurking in the fridge through the week. Keen to include it within my main meals in a low SP manner, last night I thought it may be a nice addition with salmon.
Turkey and Avocado Burgers – 1sp
Turkey breast mince is one of my new favourite ingredients. Whilst it may not taste of much on its own, a few 0sp additions make it truly delicious. Best of all, the 2% fat lean turkey breast mince (I’ve bought it in Sainsbury’s and in Tesco’s) is now 0sp on the new flex plan!
