Minted Pea and Ham Soup – 3sp

This recipe was made at the special request of a lovely lady called Ruth who requested a recipe for a pea and ham soup a few weeks ago. Well ask and you shall receive, here it is Ruth!!

This recipe calls for 200g cooked gammon/ham. You can either buy this pre cooked or you can cook a joint yourself. I bought a huge joint for around £4, boiled it and then once shredded, froze the rest in portions to use in other meals. Cooking it myself also meant that I had the boiling water (aka homemade stock) which was lovely. A ham stock cube would be just as good though.

Ham and Houmous Salad with Cous Cous – 5sp

I get lots of folk who are doing Weight Watchers often saying that they struggle to find low pro point, filling but tasty lunches. As you all probably know, I’m a huge salad fan and this is one of the regulars in my repertoire. As it’s so filling, it usually stops me fancying an afternoon snack later on in the day! I use Aldi’s cous cous as it’s the tastiest one I have had and is only 39p per pack (each pack does two lunches too!). I vary the flavours between the spicy and the lemon and coriander but both work nicely with the recipe below. I usually make two portions in one go so I don’t have to be organised two days in a row.
