One of the main reasons I made the change from an air fryer with a rotating paddle, to a double drawer air fryer was to make crispy and crunchy chicken. I found the air fryer with the paddle seemed to knock off the coating and I’d heard so many good things about the Ninja, I thought it would be worth the investment. This proved very quickly to be the right decision as we’ve used it almost daily since it was delivered and I can confirm, it’s the perfect vessel to make this Crunchy Korean Chicken.

Korean Sticky Salmon
When we used to live in Manchester we used to head to Altrincham Market most weekends as the food in there was always good. Inside there was the most amazing little window that served the freshest Korean Rice Bowls and they were always my go too choice of dinner. I got a proper craving for one this week and so I decided to try and recreate it at home. The result was delicious. Low in points yet so filling and satisfying, the flavours and textures of this dish are so fresh and zingy, you will want it again the next day!
Thai Basil Chicken
Thai Basil Chicken is a favourite of mine when I’m eating out but wasn’t something I’d ever really attempted at home. One night, after taking my fancy, I decided to give it a go and the results were delicious. A straight forward and uncomplicated recipe, this is perfect for a quick week night tea. I add a whole sliced chilli as I love a bit of spice (and that’s how it usually comes in a Thai restaurant) but if you don’t like things too hot, you could use half or leave it out entirely.

House Sugo at Home
I’ve been meaning to post this recipe for months and something always seems to come before it!! So without further ado….I discovered my favourite restaurant of all time, Sugo Pasta Kitchen, some years back when we lived in Manchester and after I tasted their House Sugo I knew I would never find a better pasta dish. Time after time I went back with my hubbie, family or friends and I thought ‘I must try something else this time’ but on every single occasion I couldn’t turn down the opportunity to have a bowl of this heavenly pasta.
Cajun Prawn Tacos
We are lucky enough to live on the coast which means we have access to some amazing fishmongers with the most incredible fresh stock. We visit as much as we can and pick up whatever takes our fancy but one thing I always have in the freezer is a giant bag of king prawns. For around £12 you get enough prawns for at least 4 meals (so 8 portions) which is great value for money. The prawns are always huge, fresh and juicy too. If you don’t live near a fishmonger, supermarkets also sell a great range of fresh and frozen prawns, either will do. Just make sure if you use frozen, the prawns are thoroughly defrosted before cooking. I defrost mine by popping into a covered bowl in the fridge the night before.
Chicken Parmo
The Chicken Parmo is a classic, delicious takeaway treat originating from Teesside. Often associated with trips to the kebab shop after a boozy night out, in its hometown this famous dish is often served with lashing of garlic sauce after being gloriously deep fried. The result is delicious but off the scale in terms of points/calories.
Moroccan Aubergine Stew
Aubergines are a vegetable that until quite recently I could take or leave. They were never top of my fav list until I started making aubergine parmigiana for my little boy and he couldn’t get enough of it. I tasted it and knew I had been missing out! After this little revelation, I’ve set out to use it in more dishes where I can, and in place of meat if possible and that’s where this dish was born.
Cheeseburger Pasta
Burger and Pasta…two of my favourite foods so surely the dream combo? The answer is yes, yes it is! I saw this dish on a restaurant menu months ago and thought I’ve got to recreate this at home myself. Not only is it delicious, it’s all done in the one pan so it’s really easy and creates minimal washing up. Not only that but it’s a perfect dish for kids as it combines all the lovely flavours of a classic burger and makes 6 portions. Perfect to feed the whole family and still have leftovers.
