Slaw Recipes

Who doesn’t love a good slaw. Whether it be to go with a burger, grilled meat or BBQ it is the perfect ‘side’ accompaniment to many a dish. I’ve created many slaw recipes to go along with my recipes so I thought it might be useful to have them all in one place so. The method for each is simply mix all the solid ingredients together, mix the dressing in a separate bowl and then mix all together!

Regular Slaw

Serves 8 = 0sp (previously 0pp) each or serves 4 = 1sp (previously 1pp) each

Half a large cabbage, finely shredded

1 or 2 carrots, peeled and finely sliced

1 large red onion, finely sliced

1 tbsp white wine vinegar

2 tsp white wine vinegar

6 tbsp extra light mayonnaise

1 tsp Dijon mustard

½ tsp wholegrain mustard

Salt and Pepper

Spicy Mexican Slaw

Serves a minimum of 6 people for 1sp each

½ white cabbage, finely shredded

2 carrots, peeled and finely chopped into sticks

1 red onion, thinly sliced

1 tbsp white wine vinegar

4 tbsp half fat mayonnaise

2 tbsp half fat sour cream

½ tsp chipotle paste

Juice of ½ lime

Mango Slaw

Serves 4 = 0sp per person

3 tbsp white wine vinegar

½ tbsp olive oil

Juice 2 limes

1 tsp caster sugar (or normal sugar if you don’t have it)

2 large mangoes, peeled and cut into matchsticks

400g chunk of white cabbage, finely shredded

1 red chilli, deseeded and finely sliced

6 spring onions, cut into matchsticks

Handful coriander leaves, roughly chopped

Asian Slaw

0sp per person for up to half of the portion but will feed up to 4

2 carrots, sliced into matchsticks

½ red cabbage, finely sliced

4 spring onions, sliced into matchsticks

Handful of coriander, chopped

Juice of ½ lime

1 tbsp white wine vinegar

1 tbsp soy sauce

Lime Slaw 

Serves 6 = 0sp each

1 carrot, cut into small matchsticks

1/2 small white cabbage, finely sliced

1 red onion, finely sliced

½ tbsp white wine vinegar

Juice of 1 lime

Handful of coriander leaves, roughly chopped

Salt and Pepper
