With the majority of my family wanting to eat out in a restaurant on Saturday night, the only way I could persuade them to stay in (and therefore allow me to nicely stay in my points) was to convince them I could cook them a meal as nice as they would have if we went out.

Smoked Bacon, Kale and Gorgonzola Pasta – 13sp
I have had a few requests for a healthy and tasty carbonara recipe so I thought it was about time I obliged! Now I’m not the biggest fan of carbonara as I find it rather carb heavy and plain so I decided to pump up the taste factor as well as the veg component and the result was delicious and tasted exactly like something you would have in a restaurant. The gorgonzola added a lovely distinctive flavour which both the OH and I really enjoyed but if you don’t like gorgonzola, feel free to replace this with some low fat crème fraiche. This was my first time cooking with kale and I really enjoyed it. It added a lovely texture to the dish and a lovely pepperiness (plus its so good for you!!)

One of my favourite cuisines of all time is Mexican as you can no doubt tell by the many Mexican inspired recipes and creations. That’s why I was thrilled when I found out that one of the lovely girl’s from my time at University had set up her own Mexican Street Food Company.

Avocado is one of my favourite vegetables but I’m always a little careful with it given it is rather high in points. I’ve wanted to use it as a stuffing for a while so I knew to do so I would have to beef it up with some 0sp ingredients.
