Like so many these days, rather than attending classes I maintain my weight loss by following Weight Watchers at home. The amount of support available in various online communities really helps you to feel like you aren’t going at it alone and helps to keep your head in the game.

Chipotle Chicken with Coriander Rice and Home Made Nachos – 10sp
I love Mexican food. The combination of coriander, chillies and lime never fails to excite my taste buds and it’s a great way to make an easy, straightforward meal into something vibrant and exciting.
Banana Chocolate Ice Cream – 4sp
Whilst Manchester might not get many sunny days, when we do, the temptation to indulge in a lovely cold iced treat is always strong. That’s why this ice cream is the perfect solution. You can make the ice cream itself 0pp but replacing the nutella with fruit such as raspberries and blackberries however just a little nutella and a few little extras make this little treat feel rather indulgent!
BBQ Pulled Chicken Burgers with Sweet Potato Fries – 9sp
As soon as I tasted how good this BBQ sauce was in my BBQ chicken Quesadilla recipe, I knew it would also go perfectly in a burger, especially in one of Aldi’s amazing Brioche Burger buns which are only 5sp each!! Sweet Potato chips are the perfect accompaniment to this recipe to and add a real pub grub feel. If you fancy reducing the points further you could make BNS fries instead of sweet potato. This would make the dish 6sp per person.
Fakeaway Chicken Tikka Pizza – 9sp
I love try new pizza toppings and one of my favourites to have when I’m eating out is a Chicken Tikka Pizza. I therefore couldn’t wait to try and make my own healthy version so that I could indulge in it at home, guilt free.
Chorizo Baked Eggs – 3sp
This is one of my favourite recipes to whip up for Sunday brunch or even for a late supper if you aren’t feeling too hungry. It’s so quick and simple but the flavours are amazing. My OH was practically licking the plate! You can customise this recipe til your hearts content. I’ve added pepper with the onion before or even a large handful of spinach. Continue reading
Chicken, Mushroom and Spinach Risotto – 12sp
After the success of my last of my last experiment with Heck Chicken Sausages I decided to give them another go and come up with another recipe. This time I decided to go for a risotto and I have to say, these sausages are becoming one of my new favourites! If you can’t get a hold of the sausages in this recipe, you could replace it with diced chicken breast (around 360g) and fry this first instead of the sausages.
Kangaroo Stroganoff – 10sp
I heard a lot about how lean kangaroo meat is so when I spotted it in Lidl I knew I would have to give it a whirl. Rather than just frying it like a normal steak I decided to try something different and the result was a lovely surprise. The meat was tender and tasty and the stroganoff sauce really complemented the kangaroo! You could serve this with rice either.
