Cinnamon French Toast – 5sp

I love eggy bread and this morning I really had a craving for something a bit sweeter. This was the perfect solution, nice and low in points but full of lovely fresh flavours. It’s the perfect summery weekend breakfast.

Ingredients

Serves 2 = 5sp (previously 5pp) each

2 slices of bread

2 eggs

¼ tsp cinnamon

¼ tsp sweetener

Squeeze of lemon juice

100ml fat free Greek yogurt

1 tsp of agave syrup (or honey)

Handful of berries of your choice (I used raspberries)

Sprinkle of icing sugar

Method

Crack the eggs into a mixing bowl, add the cinnamon, sweetener and lemon juice and beat until well combined.

Soak both sides of the bread in the egg mixture and pop to one side.

Heat a large frying pan and when hot, spray with 1kal. Fry the bread on both sides for a few minutes until nicely browned. Cut into triangles and serve with a dollop of yoghurt, drizzle of agave syrup, sprinkle of icing sugar and handful of berries.
