Ham and Houmous Salad with Cous Cous – 7sp

I get lots of folk who are doing Weight Watchers often saying that they struggle to find low pro point, filling but tasty lunches. As you all probably know, I’m a huge salad fan and this is one of the regulars in my repertoire. As it’s so filling, it usually stops me fancying an afternoon snack later on in the day! I use Aldi’s cous cous as it’s the tastiest one I have had and is only 39p per pack (each pack does two lunches too!). I vary the flavours between the spicy and the lemon and coriander but both work nicely with the recipe below. I usually make two portions in one go so I don’t have to be organised two days in a row.

Ingredients

Serves 2 = 7sp (previously 7pp) per serving

1/2 Pack of Cous Cous (50g dried)

40g Reduced Fat Houmous (I used Sainsbury’s Be Good to Yourself which is 2sp for 40g)

100 g Wafer Thin Ham

Handful of baby tomatoes, halved

Wedge of cucumber, diced

1/2 red onion, sliced

Salad pepper, sliced

Mixed Salad Leaves

Dash of balsamic vinegar

1 tbsp picked red cabbage

Salt and Pepper

Method

Prepare cous cous.

Meanwhile chops all vegetables and pop in a large bowl. Add the balsamic and red cabbage.

Once cous cous is cooked add to the bowl.

Rip up your wafer thin ham into smallish sized pieces and scatter over cous cous and salad mix.

Pop into a bowl and top with the houmous (or toss through).

Season with salt and pepper and a squirt of lemon if you fancy!

    Hi Lauren. I love ur ideas. Does it work out at 5sp for cous cous and 2 for houmous? When I scan my reduced fat houmous it says 7sp per 100g. Can’t get it to work out at 7sp for whole meal. Just font want to make a silly mistake. Thanks

      Hi Tina, it is 5sp for the cous cous 1 for the ham and 1 for the houmous (using 40g of houmous). I have had to tweak the recipe slightly as weight watchers have changed the points for the cous cous and houmous I used x
