Chicken, Leek and Mushroom Pasta – 9sp

I love a nice quick and easy pasta and whack one together a regular occasion but sometimes its nice to have a change from the quick and easy tomatoey pasta sauce. This is a great recipe that my lovely mam created when she first started Weight Watchers a few years ago and it’s something I still make on a regular occasion. It’s lovely and creamy but nice and light at the same time and is lovely with a nice glass of white (careful to add the extra points !).

Paprika Beef Casserole – 12sp

We often buy beef for a change and I’m always stuck for something a bit different to do with it, so, as it was all defrosted and ready yesterday, we decided to try out one of my mam’s favourite recipes. She has made this as part of a three course meal as well as just a Sunday Lunch and it always goes down a storm so I was more than pleased when I worked out the points at only 12sp for the whole meal. You get a huge portion and it tastes amazing! It might take a while in the oven, but once its in there you can almost forget about it and come back when its ready!

Thai Beef Massaman Curry – 10sp

I love a Thai curry and whenever we go out to a Thai restaurant, I always look at those having a Massaman curry with envy knowing how high in points they are. To quell my craving for this Thai delight, I decided that this week I would try and adapt a low point version. I researched different ingredients common in Massaman curry’s and ended up adapting this little beauty. It turned out beautifully and was only 10sp so paired with 40g of dry basmati rice per person. This made the whole meal only 14sp, bargain!

I’ve included some instructions for making this curry with chicken too for those who aren’t the biggest beef fans. If you want to reduce the points even further you could omit the potatoes but I think they add a lovely additional texture and bulk to the dish. Next time I make this I’m also going to whack in a carrot or two!

Chicken and Chorizo Jambalaya – 8sp

We often take some meat out of the freezer in the morning and then I come home and see what I can create with it. One evening a few months back, having taken two chicken breasts out the freezer, I arrived home from work and thought ‘I really can’t be bothered to faff around’ so I looked into my fridge to see what else I could throw in with the chicken to make something quick, easy and tasty.  This was result and I have to say it’s one of mine (and a lot of my friends) favourites. It’s all cooked within one pan so limited washing up is required. The pan needs to be covered while simmering however if you don’t have a lid, just use a bit of tin foil, that’s what I do!

Smoky Sausage Pasta by Skinny Kitchen Secrets

I always head down the ‘world foods’ aisle in my local supermarket whenever I’m in need of a spice refill (you get twice as much for half the price just one aisle away from all the regular supermarket range!) Many a time I’ve walked down there and looked at the polish food range and all the lovely meaty goodness they have on offer but I’ve never know what to try. Then I came across a recipe that used these lovely smoked sausages and so I used it for a bit of inspirations to make this quick and easy dish. The sausage I used in this recipe was from Aldi and is a lovely smokey delight. I always thought smoked sausages would be a bit pointy but when I worked it out it was actually way less than I anticipated meaning a very filling, low sp dish!

Chicken, Butternut Squash and Pesto Lasagne – just 14sp

This little number (an adaptation of a recipe I came across on the Good Food website here) was cooked up at the special request of my lovely little sister who fancied a new chicken pasta dish. I really fancied trying something new and after a bit a research came across this little treat. I cooked it up last night and it was absolutely delicious and so different from anything else I’ve tasted so, Michelle, enjoy!

Asian Pork Hotpot – 7sp

I cook with lean pork steak quite often as it’s often a nice change from chicken. I’m always on the lookout for new ways to use it and so when I came across this recipe on the Good Food website I knew I had to give it a go. I adapted the recipe to make it both Weight Watchers friendly and added a few bits that I thought would improve the dish too. The result was gorgeous. It had a really different flavour to anything I’ve made before and even though its technically a hot pot, it feels lovely and light and summery.
