Chilli Con Carne – 4sp

Chilli is one of my all-time favourite meals. It is so quick and easy but so incredibly tasty and I look forward to it every time we have it! I often assumed chilli would be quite pointy but I think 6sp is more reasonable considering the giant portion you get. Because it is so low in points this also means that you have more points left over for rice, and cheese or even sour cream on top if you fancy!

Chorizo and Red Pepper Omelette – 9sp

I love a good omelette. Not only is it a great way to use up left overs but its also a really quick and easy lunch to put together, especially if you are trying to avoid bread! Omelettes are so versatile, you can add virtually anything you can think of, but this combination is one of my favourites. It’s nice and low in points but has so much flavour that it feels like a real treat!

Mussels with Spaghetti in a Spicy Tomato Chilli Sauce – just 9sp

Mussels might seem a bit daunting to make at first but they are actually a great midweek option. They are ridiculously quick to make and at just £3.50 for a 1kg bag they are a cheaper option than chicken or mince. If you omit the spaghetti they are just 6pp which is a great starter option but add some spaghetti and for only 10pp you get a gorgeous and filling dinner! If you have a few pro points left for the day you could even treat yourself to a WW petite pain!

Smoky Sausage and Butterbean Casserole

Usually I would class a stew as a winter recipe but this one is so easy and tasty that I often make a big batch at the start of the week and take it for my lunch Monday- Thursday. As its still quite chunky its really satisfying and the sour cream adds a lovely fresh taste. If you have it in the evening, any left overs can be frozen for another day (just freeze it before you add the sour cream). I had it as it is but often, when the OH was ravenous so I threw a few new potatoes into his. This is a classic Hairy Bikers recipe that I converted into a lower point options. Sticky Chicken Wings – 12sp

Whenever we go out to eat, my other half always chooses chicken wings if they are on the menu so when he decided to make a valentines meal on Friday, he thought he would try and make his own from a recipe he saw online. Since then I’ve adapted the recipe further to suit my own tastes and Weight Watching needs and it is just as delicious (and much nicer than any wings I’ve had in a restaurant)!

Prawn and Goats Cheese Risotto – 14sp!

Goat’s cheese has a delicious flavour and lasts forever in the fridge so I usually buy some once every couple of months and use it when I am getting down to the last of the contents of my cupboards. Having been in this situation yesterday evening, and having no meat defrosted, I decided to try something new and give the combination of prawns and goats cheese a whirl. I had all the ingredients lurking about in the kitchen already so it was really easy to put together and I have to say, it tasted absolutely incredible. It’s a bit different from other risotto flavours I’ve tried before as a result of the gooey goats cheese and its definitely one I will be repeating again and again! If you aren’t a fan of seafood, this recipe would be equally as nice with bacon or even chorizo. Just remember to revise the sp accordingly.

One Year at Goal!

So the end of the Month of March officially marked one whole year of being at my weight loss goal. This means that I’ve now been ‘maintaining’ my four stone weight loss and new weight for longer than I was trying to lose it on Weight Watchers which, for me, is a nice way to think about it.

Chilli Beef Ramen – 6sp

I’ve had a jar of Thai 7 Spice lurking in my cupboard ever since I spotted it in the shop and thought ‘Oooh that looks interesting’. Ever since I have been trying to find a nice recipe to try it in and on a recent visit to Scotland, my friend told me about an amazing Weight Watchers Ramen recipe (found here). Ramen was something I had wanted to give a go for a while and seemed like the perfect way to make a nice wintery alternative to the summery stir fry so I set about changing the recipe to my own liking. The results were gorgeous and the whole thing only took around 15 minutes to cook from start to finish. The dish is so low in points and so filling, and has no complicated ingredients, it really is worth giving a go! I would usually use individual stir fry veg, but I was a bit time restricted tonight so I picked up a bag of the stir fry veg from Tesco. It was only £1 and had peppers, beansprouts, cabbage and carrot in it and it was the perfect size for two people

Asian Glazed Salmon with Wild Rice and Garlic Asparagus – 14sp

I love a nice piece of salmon so when I discovered some lurking at the bottom of the freezer yesterday morning, I decided I would try something new with it. I’m not a massive fan of creamy sauces that usually go with salmon so I thought I would see if I could create something saucy but a bit different. I ended up adapting a recipe I found online (here) but changed it quite extensively! The result was this lovely light recipe that doesn’t take too much effort but the results are amazing. The garlicky asparagus really adds something to the dish however if you don’t like/haven’t got asparagus any green veg will do (sugar snap peas, green beans, broccoli). I’ve used wild rice as it’s my new fav however you could do it with any rice you fancied.
